The inception of bouchons traces back to Croix-Rousse, the heart of Lyon's bustling silk district, where the Canuts, or silk workers, frequented these humble establishments as their preferred dining spots. Within the cozy confines of these early bouchons, a unique division of labor emerged: while the proprietress masterfully tended to the kitchen and its culinary creations, her counterpart presided over the wine cellar and warmly welcomed patrons into the dining room.

But first, what should you eat at a bouchon?

We recommend starting with an aperitif, perhaps a glass of kir which is a blend of blackcurrant liqueur and wine, paired with grattons, savory pork scrapings, or delicate slices of rosette, a flavorful dry pork sausage. Another great option is the cervelle de canut, “silk worker’s brains”, which is a fresh cows cheese mixed with herbs and shallots.

For starters go for the salade Lyonnaise with croutons, bacon, and a perfectly poached egg, or the savory saucisse - a cooked sausage often studded with pistachios. Another local option is the oeuf en meurette, a poached egg in red wine sauce with bacon bits.

As you progress to the main courses, if you are brave you can revel in the pork-centric offerings that dominate Bouchon menus. Dishes that are appreciated by most include the unique and traditional quenelle, a fish dumpling in langoustine sauce. This is a really special dish that we highly recommend!

You can also never go wrong with chicken, likely sourced from the nearby Bresse region of France.
